Hummus with Vegetable Sticks

Why it helps

The fiber and protein in chickpeas help regulate the absorption of sugars, so blood sugar stays on an even keel, and the healthy fats from tahini and olive oil slow the absorption of sugars even further. Pairing hummus with raw, non-starchy vegetables adds extra fibre and vitamins without significantly raising the carbohydrate content of the snack. This combination fits well into a balanced dietary pattern that supports steady energy between meals.

Ingredients

1 cup canned chickpeas, drained and rinsed
2 tablespoons tahini
2 tablespoons olive oil
2 tablespoons lemon juice
1 small clove garlic
2 to 3 tablespoons water, as needed
Salt, to taste
1 cup carrot sticks
1 cup cucumber sticks
1 cup bell pepper strips

Methods

Add the chickpeas, tahini, olive oil, lemon juice, and garlic to a food processor.
Blend until smooth, adding water a tablespoon at a time until the desired consistency is reached.
Season with salt to taste.
Transfer the hummus to a bowl.
Serve with carrot sticks, cucumber sticks, and bell pepper strips for dipping.
