Baked Groundnut Snack
Why it helps
Groundnuts (peanuts) are a good source of plant protein, fibre, and healthy fats, along with magnesium and vitamin E. Baking instead of deep-frying this traditional snack keeps the added fat closer to what is naturally in the groundnuts. This makes for a more balanced, protein-rich snack option compared to more refined, processed alternatives.
Ingredients
2 cups roasted, unsalted groundnuts (peanuts)
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper (optional, to taste)
1/4 teaspoon salt
2 to 3 tablespoons water, as needed
Methods
Preheat the oven to 175C (350F). Line a baking tray with parchment paper.
Blend the groundnuts in a food processor until they form a thick, slightly oily paste.
Transfer the paste to a bowl and mix in the ginger, cayenne pepper if using, and salt.
Add water a tablespoon at a time, kneading until the mixture holds together and can be shaped without crumbling.
Shape the mixture into small discs, balls, or short sticks, about 1/2 inch thick.
Arrange the shapes on the prepared baking tray, spaced apart.
Bake for 20 to 25 minutes, flipping halfway through, until golden brown and firm.
Let cool completely before serving, as they will crisp up further as they cool. Store in an airtight container for up to 1 week.
