Blueberry Chia Seed Yogurt Pudding

Ingredients

1/4 cup chia seeds
1 cup frozen blueberries
1 cup milk of choice (dairy or unsweetened plant-based)
1/4 cup plain Greek yogurt
1 tablespoon honey
1 teaspoon vanilla extract

Methods

Add the blueberries, milk, Greek yogurt, honey, and vanilla extract to a blender. Blend until smooth, about 1 minute.
Divide the chia seeds evenly between two small jars or bowls.
Pour the blueberry mixture over the chia seeds in each jar.
Stir well to combine, making sure there are no clumps of chia seeds.
Let sit at room temperature for 10 minutes, then stir again.
Cover and refrigerate for at least 4 hours, or overnight, until thickened.
Stir once more before serving. Add extra berries or a sprinkle of nuts on top, if desired.
