Preheat the oven to 220C (425F) or preheat a grill.

Pierce the eggplants a few times with a fork, then roast or grill them whole for 30 to 40 minutes, turning occasionally, until the skin is charred and the flesh is very soft.

- 5
Mash or blend until mostly smooth, leaving some texture if desired.
- 6
Season with salt to taste.

Transfer to a serving bowl, drizzle with a little extra olive oil, and garnish with parsley if using.
- 8
Serve with carrot sticks, cucumber sticks, and bell pepper strips for dipping.
Why it can fit a PCOS-friendly week
Baba ganoush is naturally low in calories, high in fibre, and rich in healthy fats from tahini and olive oil, which support satiety and heart health. Eggplant provides fibre and antioxidants, including a compound called nasunin. Served with raw vegetables instead of fried pita chips, this makes for a lighter, more balanced snack that fits well into a Mediterranean-style eating pattern.
