Roasted Garden Egg with Groundnut (Peanut) Paste

Why it helps

Garden egg is a good source of fibre and is naturally low in calories, which can contribute to a filling snack without excess added sugar. Groundnuts provide plant protein, fibre, and magnesium, along with healthy unsaturated fats. Together, this pairing offers a more balanced snack profile than carbohydrate-only options, which fits well into a dietary pattern that supports steady energy between meals.

Ingredients

4 fresh garden eggs
3 tablespoons roasted groundnuts (peanuts), shelled
1 small onion, finely chopped (optional)
1/4 teaspoon ground chili pepper (optional)
A pinch of salt

Methods

Rinse the garden eggs and pat dry. Trim the stems.
Roast the garden eggs whole in a dry pan or under a grill for 5 to 7 minutes, turning occasionally, until the skin softens slightly.
While the garden eggs roast, crush the groundnuts coarsely using a mortar or the flat side of a knife.
Mix the crushed groundnuts with the chopped onion, chili pepper, and a pinch of salt in a small bowl.
Slice the roasted garden eggs into wedges.
Serve the garden egg wedges with the groundnut mixture on the side for dipping, or sprinkle the mixture directly over the wedges.
