Moimoi (Steamed Black-Eyed Pea Pudding) with Boiled Egg

Why it helps

Ingredients

2 cups dried black-eyed peas (peeled) or brown beans
1 red bell pepper, roughly chopped
1 small onion, roughly chopped
1 fresh chili pepper (scotch bonnet or to taste), optional
2 tablespoons red palm oil or vegetable oil
1 teaspoon ground crayfish (optional)
1 seasoning cube or 1 teaspoon low-sodium bouillon powder
Salt, to taste
1 cup water (for blending)
4 hard-boiled eggs, peeled
Small pieces of foil, banana leaf, or ramekins, for steaming

Methods

Soak the black-eyed peas or brown beans in water for 15 to 20 minutes to loosen the skins, then rub between your palms to remove the skins. Rinse well and drain.
Blend the peeled peas with the red bell pepper, onion, chili pepper, and 1 cup of water until smooth and creamy.
Pour the mixture into a bowl. Stir in the palm oil, ground crayfish, seasoning cube, and salt until well combined.
Divide the mixture into foil wraps, banana leaf pouches, or greased ramekins, filling each about two-thirds full.
Place a whole boiled egg into the centre of each portion.
Arrange the wrapped portions or ramekins in a steamer or a pot with a small amount of water at the bottom (water should not touch the mixture).
Cover and steam for 45 to 50 minutes, until firm and set. Check by inserting a knife; it should come out clean.
Let cool slightly before unwrapping and serving warm.
