Chicken and Ginger Congee

Ingredients
1 cup jasmine rice, rinsed
8 cups low-sodium chicken broth or water
2 boneless, skinless chicken thighs or 1 chicken breast
1-inch piece fresh ginger, thinly sliced, plus extra grated ginger to taste
2 green onions, thinly sliced (white and green parts separated)
1 teaspoon low-sodium soy sauce
1/2 teaspoon sesame oil
Salt, to taste
White pepper, to taste
Soft-boiled egg, for topping (optional)
Methods
Add the rinsed rice, chicken broth, chicken, and sliced ginger to a large pot.
Bring to a boil, then reduce the heat to low and simmer uncovered for 60 to 75 minutes, stirring occasionally to prevent sticking, until the rice has broken down into a creamy, silky porridge.
Remove the chicken, shred it with two forks, and set aside.
Continue simmering the congee, stirring more frequently as it thickens, until it reaches your desired consistency.
Stir the shredded chicken back into the pot along with the white parts of the green onion.
Season with soy sauce, sesame oil, salt, and white pepper to taste.
Ladle into bowls and top with the green parts of the green onion, extra grated ginger, and a soft-boiled egg if using.
