Vietnamese-Style Chicken and Cabbage Salad (Goi Ga)

Ingredients
2 boneless, skinless chicken breasts
4 cups green or napa cabbage, thinly shredded
2 carrots, julienned or shredded
1/4 red onion, thinly sliced
1/2 cup fresh mint leaves, roughly chopped
1/2 cup fresh cilantro, roughly chopped
2 tablespoons roasted peanuts, chopped
3 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon rice vinegar
1 tablespoon honey
1 small chili pepper, finely chopped (optional)
1 clove garlic, minced
Methods
Bring a pot of water to a boil. Add the chicken breasts and simmer for 15 to 18 minutes, until fully cooked. Remove, let cool slightly, then shred with two forks.
In a small bowl, whisk together the fish sauce, lime juice, rice vinegar, honey, chili, and garlic to make the dressing.
In a large bowl, combine the shredded cabbage, carrots, and red onion.
Add the shredded chicken and half the mint and cilantro to the bowl.
Pour the dressing over the salad and toss well to combine.
Let the salad sit for 5 to 10 minutes to allow the flavours to develop.
Top with the remaining herbs and chopped peanuts before serving.
