Moroccan-Style Chickpea and Vegetable Tagine

Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
1 sweet potato, cubed
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon turmeric
1 can (400g) chopped tomatoes
2 cans (400g each) chickpeas, drained and rinsed
2 cups vegetable stock
1/4 cup dried apricots, chopped
Salt, to taste
Black pepper, to taste
Fresh cilantro, chopped, for garnish
1 cup whole wheat couscous or quinoa, for serving
Methods
Heat the olive oil in a large pot over medium heat. Add the onion and cook for 4 to 5 minutes until softened.
Add the garlic, carrots, and sweet potato, and cook for 3 to 4 minutes.
Stir in the cumin, cinnamon, ginger, and turmeric, and cook for 30 seconds until fragrant.
Add the chopped tomatoes, chickpeas, vegetable stock, and dried apricots. Bring to a boil.
Reduce the heat and simmer, partially covered, for 25 to 30 minutes, until the vegetables are tender.
Season with salt and pepper to taste.
Meanwhile, prepare the couscous or quinoa according to package instructions.
Serve the tagine over the couscous or quinoa, garnished with fresh cilantro.
