Greek Sheet Pan Chicken with Mediterranean Vegetables

Ingredients
8 bone-in, skin-on chicken thighs (or boneless for less fat)
3 tablespoons olive oil
Juice of 1 lemon
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt, to taste
Black pepper, to taste
2 medium zucchini, sliced
1 red bell pepper, sliced
1 red onion, cut into wedges
1 cup cherry tomatoes
1/2 cup Kalamata olives
1/2 cup feta cheese, crumbled
Fresh parsley, chopped, for garnish
Methods
Preheat the oven to 220C (425F).
In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper to make the marinade.
Place the chicken thighs in a bowl and pour about two-thirds of the marinade over them. Toss to coat and let sit for at least 10 minutes.
Arrange the zucchini, bell pepper, red onion, and cherry tomatoes on a large sheet pan. Drizzle with the remaining marinade and toss to coat.
Place the marinated chicken thighs on top of the vegetables, skin side up.
Bake for 35 to 40 minutes, until the chicken is cooked through and the skin is golden.
Scatter the Kalamata olives and feta cheese over the sheet pan in the last 5 minutes of baking.
Garnish with fresh parsley before serving.
